After acquiring many competences in this field Aurelio Gandola chose to start a new challenge trying to propose to his clientele a new concept of traditional restaurant adapting the main receipts from Lake Como and from the italian culinary heritage to a contemporary concept of cusine.
To Aurelio starting a challenge like Bilacus was only the first step of a new challenge that he tries to face everyday.
Everyday Aurelio tries to trasmit to his clientele the importance of those dishes that are typical of our tradition withouth forgetting the significant role that innovation and research play in a subject like cuisine.
